Chocolate Mousse

Wikipedia says that mousse is a form of creamy dessert typically made from egg and cream (classically no cream, only egg yolks, egg whites, sugar, and chocolate or other flavorings), usually in combination with other flavors such as chocolate or pureed fruit. Once only a specialty of French restaurants, chocolate mousse entered into American and English home's cuisine in the 1960s. Mousse-like desserts in middle America commonly go under designations like "whip".

Depending on how it is prepared, it can range from light and fluffy to creamy and thick.

Ingredients:

* 400g strong dark eating chocolate

* 150g unsalted butter

* 6 eggs

* 6 tbs sugar

* pinch of salt

Method:

* Separate the eggs, placing the whites into a roomy bowl.

* Break the chocolate into small pieces and put them in another roomy bowl set over a pan with a centimeter of barely simmering water. Add the butter and allow both to gently melt. Stir occasionally.

* In the meantime, add a pinch of salt to the egg whites and whisk to the soft peak (floppy) stage.

* In a separate bowl, break up the yolks with sugar.

* When the chocolate and butter have melted and have been allowed to cool for a couple of minutes stir in the yolks.

* Cut and fold in the whites in three batches until seamlessly combined. Pour into ramekins and refrigerate for a couple of hours to set.

* Serve with strawberries, raspberries or whipped cream.

Eton Mess
Wikipedia says that Eton mess (also called Eaton mess) is a dessert of English origin consisting of a mixture of strawberries, pieces of meringue and cream, which is traditionally served at Eton College's annual cricket game against the students of Winchester College. One anecdotal story is that the dessert was invented when a Labrador accidentally sat on a picnic basket in the back of a car on the way to a picnic.  Eton mess was served in the 1930s in the school's "sock shop" (tuck shop), and was originally made with either strawberries or bananas mixed with ice-cream or cream. Meringue was a later addition.  An Eton mess can be made with many other types of summer fruit, but strawberries are regarded as more traditional.
The word mess may refer to the appearance of the dish, or may be used in the sense of "a quantity of food", particularly "a prepared dish of soft food" or "a mixture of ingredients cooked or eaten together".

Ingredients
  • 4 cups strawberries
  • 2 teaspoons caster or vanilla sugar
  • 2 cups whipping cream
  • 1 packet individual meringue nests
  • fresh mint, to garnish
- Whip the cream and sugar until soft peaks form.
- Clean the strawberries and cut into smaller pieces, if necessary.
- Layer strawberries, meringues and whipped cream into a large serving bowl or into individual glasses.
- Garnish with chopped fresh mint and serve.

I love cheese, every kind of cheese so one of my favorite cookies are made with cheese.

Nigella Lawson’s Cheesy Feet

These scrumptious cheese biscuits are from a recipe in Nigella Lawson's cookbook, Feast: Food to Celebrate Life. She calls it "Cheesy Feet" because she uses a foot-shaped cookie cutter. But, as she points out in the recipe, you can use any shape you want.

CheesyFeetNAMINAMI Ingredients:

Makes about 16 feet

  • 1 ½ cups Cheddar cheese, grated
  • 1 ½ tablespoons soft butter
  • 1/3 cup all-purpose flour
  • ¼  teaspoon baking powder

 

 

- Preheat the oven to 200C.

- Place all ingredients into a food processor and blitz until comes together (if you haven't got a food processor, then mix grated cheese, soft butter chunks, flour and baking powder in a bowl and work between your fingers until combined).

- Form a flat disc, wrap in a plastic wrap and let it rest in the fridge for 15 minutes.

- Roll the rested dough on a floury surface to about 3 mm in thickness, and cut out your feet with feet-shaped cookie cutters. You can keep re-rolling this dough and cutting out feet until it is all used up.

- Put them on a lined baking sheet and cook in the preheated oven for 10 minutes, until slightly golden on edges.

NB! Overcooked cheese cookies taste nasty and bitter, so take them out of the oven when still light golden.

- Transfer the cookies to a metal rack and allow to cool.

The Vanilla Pudding Robbery

This is just too funny not to share. Excerpted from an article which appeared in The Dublin Times about a bank robbery on March 2.

Once inside the bank shortly after midnight, their efforts at disabling the security system got underway immediately. The robbers, who expected to find one or two large safes filled with cash & valuables, were surprised to see hundreds of smaller safes throughout the bank.
The robbers cracked the first safes combination, and inside they found only a small bowl of vanilla pudding. As recorded on the bank's audio tape system, one robber said, 'At least we'll have a bit to eat.'
The robbers opened up a second safe, and it also contained nothing but vanilla pudding. The process continued until all safes were opened. They did not find one pound sterling, a diamond, or an ounce of gold. Instead, all the safes contained covered little bowls of pudding.
Disappointed, the robbers made a quiet exit, each leaving with nothing more than a queasy, uncomfortably full stomach.
The newspaper headline read:
